Another 48 Hours in Glasgow

September 21, 2015 by Nat & Tim 23 Comments

GLASGOW

We love Glasgow We fell in love with Glasgow during our first 48 hours there so we opted to return for another 48 hours in Glasgow after our road trip, instead of heading to Edinburgh, as previously planned. After dropping off the car we headed to the citizenM hotel. If you haven’t heard of the citizenM, […]

TROFIE WITH PESTO, GREEN BEANS AND POTATOES

March 10, 2015 by Nat & Tim 1 Comment

trofie with pesto potatoes and green beans

This dish comes from Liguria, home of pesto. Having potatoes and pasta in the same dish might sound strange but once you taste it you will see that they go well together in this recipe. We’ve also made this with the addition of crispy pancetta, it goes against tradition but is delicious nonetheless.

chicken porcini

Chicken and porcini On our whirlwind day trip up to Florence we took in the Mercato Centrale with tons of tasty treats to choose from, beautifully displayed to attract customers. One thing that was plentiful were dried porcini mushrooms. A tip for anyone looking to buy top quality dried porcinis is to make sure they […]

LUMACHELLE

lumachelle

Lumachelle Orvieto has become our go to town for the weekly market, dinners out and meeting up with friends. The town is best known for its incredible white wine, Orvieto Classico, but also has had an amazing history since Etruscan times. If you’re nearby and your itinerary does not include Orvieto you are definitely missing […]

Truffle dreams do come true

white truffle

A love affair with truffles It would be fair to say that I have a strong love affair with truffles. I am not talking about the confection of chocolate shaped to look like a truffle but the fungi itself. To be in Italy for winter truffle season was something that I have wanted for a […]

MEAT CANNELLONI

February 2, 2015 by Nat & Tim 1 Comment

cannelloni

Cannelloni has been on my mind for some time now and finally on a chilly Sunday I took the time to put a batch together. Like lasagna, once you have all your ingredients prepared, the assembly goes quickly and is fun. Using pre-made tubes and trying to fill them is a total pain so use […]

NONNA’S PINE NUT CROSTATA

January 19, 2015 by Nat & Tim Leave a Comment

Nonna's pine nut tart

Crostata di nonna While out on a day trip to Chiusi to visit their Etruscan museum we picked up some lunch at a little shop filled with homemade goodies. Among the temptations were porchetta style duck, veal and rice suppli (aka arancini), amazing cantuccini and the last few pieces of crostata di nonna. The lure […]
