Bananas for Beer Nuts – COCONUT PORTER BANANA BREAD

If you know me or even read this blog you will know that I enjoy a beer or two on occasion. Last week while enjoying a cool Maui Brewing Co. Coconut Porter in the breezy sunshine of Upcountry Maui and snacking on the totally addictive Macadamia beer nuts we have been whipping up regularly, we reminisced of the fun of harvesting bananas in Hana and the monster bunch we cut down (54.5 lbs).

Coconut stout

I had one more coconut stout in the fridge, three or four frozen black bananas and if I stopped eating them now, I would have enough mac nuts left to make the bread. A quick modification to my standby banana bread recipe and I was up from my chair with pupose.
Make up a recipe of the Mac nuts to start and save the egg yolk for the banana bread. I like to make banana bread in two mini loaf pans when I can but use whatever bread pan you have available. I scraped in some of the crumbles of baked sugary bits from the nuts too.
The results were delicious moist banana bread with a hint of spiced stout and studded with salty/sweet macadamia nuts. You have to try this recipe!

COCONUT PORTER BANANA BREAD with macadamia beer nuts

Ingredients
  1. 1/3 cup of unsalted butter
  2. 1 cup of light brown sugar
  3. 1 whole egg plus 1 yolk (from the mac nuts)
  4. 3 super ripe bananas (black!)
  5. 1 tsp vanilla extract
  6. 1/3 cup Coconut Porter (Guinness is good too ๐Ÿ˜‰ )
  7. 2 cups Flour
  8. 2 tsp baking powder
  9. 1/2 tsp baking soda
  10. 1/2 tsp cinnamon
  11. Pinch of salt, nutmeg and cloves
  12. 1/2 to 3/4 cup spiced mac beer nuts
Instructions
  1. In a mixing bowl beat the butter and brown sugar together until light and kind of fluffy.
  2. Add the egg slowly to incorporate fully and then mix in the bananas and vanilla.
  3. In another bowl mix together the dry ingredients and then mix half into the banana mixture. Add in the beer and follow with the rest of the dry mix.
  4. Fold in the mac beer nuts and scrape well to make sure all is well incorporated.
  5. Spread the batter into your chosen buttered and floured bread pan and bake in a preheated 350F oven for 45 mins to an hour or until a toothpick comes out clean when poked into the middle.

    Someday I hope to get over my hatred of bananas —- but the other ingredients sound good. Is coconut stout widely available outside of Hawaii?

      Tim isn’t fond of bananas either but likes them in a bread. You might be able to find coconut porter in a specialty store, or use any other type of stout you like.

    Love it! We’ve got a bunch of bananas ripening in our driveway here on Kauai, hopefully just in time for German guests next month. My husband prides himself on his banana bread (“secret” ingredient: mini chocolate chips) so I’m going to share this recipe for his repertoire. Aloha!

    This banana bread looks and sounds great. I’ve not heard of Coconut Porter. I don’t know if I can get it in Manitoba, but I will look for it.

      You could always use a stout or regular porter instead of the coconut porter.

    I’m going to have to pass on this one and just trust that it’s delicious as I’ve never been able to develop a taste/liking for beer. I think I may be the only one in the world, but it’s true. ๐Ÿ˜‰

    Sounds delicious and I’ll give it a try in August when I have access to an oven again. I always want to cook or bake during the travel times when we don’t have a fully stocked kitchen! Ah well…
