CHEESE-LESS CHEESECAKE and MACADAMIA CRUMBLE

So much guacamole

We’ve been on Maui for over a month now, taking care of our friends’ two properties, animals and fruit trees.  We’ve been dealing with a surplus of bananas and avocados.  Needless to say, we’re trying to use as much as we can but there is so much guacamole and banana bread a person can eat. We’ve started branching out into vegan and vegetarian recipes, even using avocado in desserts.

I found a recipe for raw avocado cheesecake but had none of the ingredients other than avocado so I decided to make my own version.

Ingredients
  1. Filling
  2. 1 large avocado
  3. 3 tbsp honey
  4. 3 tbsp water
  5. 1 tsp pure vanilla extract
  6. 3 tbsp butter
  7. pinch of salt
Instructions
  1. Blend the avocado, water, honey and vanilla in a high speed blender until completely smooth.
  2. Add the butter and salt. Blend again. Add a bit more honey if you want it to be sweeter.  Blend again.
  3. Spoon the filling into cups.
  4. Chill in the fridge for 4-5 hours.
  5. Once set it has the consistency of a super thick pudding and a satiny mouthfeel.

MACADAMIA CRUMBLE

Ingredients
  1. 1 1/4 cups roasted macadamia nuts, ground
  2. 1/2 cup bread crumbs
  3. 3 tsbp sugar
  4. 1/4 tsp salt
  5. 3 tbsp butter, softened
Instructions
  1. In a food processor or mixing bowl, combine the nuts, bread crumbs, sugar and salt. Add the butter and combine.
  2. You can press the mixture down into a cast iron pan and bake in a preheated 350F oven for about 20 minutes or until it becomes golden.
  3. Once it's ready, let cool and then break it up into crumbs and pieces and sprinkle on top of the set cheese cake mixture.

    Yummy! Needless to say that I’d love to try and make this cheese less cheesecake. Everything made with avocado can only be good! 🙂

    Avocado and Macadamia, this is very interressant.
    I never try to mix those, but really enjoy both ingredients.
