Lille’s Garden of Giants – BEST BANANA BREAD EVER

Jardin des Géants

The Garden of Giants in Lille France covers about 2 hectares and includes more than 45 thousand types of plants.  Created in 2009 by Mutabilis Landscape Architecture the gardens include water features and metal structures and sculptures.  It also has a small cafe to grab a bite and a drink or in our case, to get out of the rain.

BEST BANANA BREAD EVER

Ingredients
  1. 1/3 cup melted coconut oil
  2. 1/2 cup honey
  3. 2 eggs
  4. 3 medium bananas, mashed
  5. 1 tsp vanilla extract
  6. 1/2 tsp salt
  7. 3/4 tsp cinnamon
  8. 3/4 cup whole wheat flour
  9. 1/2 cup quick oats
  10. 1/2 cup buckwheat flour
  11. 1 tsp baking soda
Instructions
  1. Butter (or line with parchment paper) a regular sized bread pan
  2. Turn oven to 350F
  3. In a mixing bowl, beat together coconut oil and honey
  4. Add eggs one at a time, beat well
  5. Add bananas and vanilla, beat well
  6. In separate bowl, mix together flours, baking soda, cinnamon and oats
  7. Add dry ingredients to wet mixture, in batches
  8. Mix only until incorporated
  9. Bake in oven for 50 to 60 minutes or until a toothpick stuck in the middle
  10. comes out clean.

Honey banana bread

This recipe was adapted from Cookie and Kate.  I added buckwheat flour and oats and omitted a few steps to simplify.  What you are left with is a quick, healthy and delicious banana bread, the Best Banana Bread Ever, my opinion. Enjoy it with honey butter or on its own.
