European Markets Part One – CREAMED CHANTERELLES ON TOAST

Eating at restaurants

If you’re travelling for any length of time, eating at restaurants gets a little tedious and expensive. If you want to save a few dollars and aren’t interested in eating fast food or street food every day, you can save some cash by renting a room with a kitchenette. You can often find deals through websites like hotels.com (with coupons from ChameleonJohn.com) or hostelbookers.com.

The fun part about cooking for yourself in foreign cities are the markets. Markets are a great place to learn about other cultures, their local food and how to prepare it.

The first thing we do in any city is, find out where and when the markets are held and this trip is no different. From Bologna to Budapest by way of Torino, visiting markets is always a learning experience, even for a chef.

Here is a quick and easy recipe for creamed chanterelles on toast we made, ok Tim made, in our €38 a night hotel room in Frankfurt.

CREAMED CHANTERELLES ON TOAST

Ingredients
  1. 4 cups cleaned chanterelles
  2. olive oil
  3. 1/3 cup cream cheese (we used chive and Gewurztraminer cream cheese, Philadelphia Cream Cheese works well)
  4. salt and pepper
Instructions
  1. Sautée over high heat so they fry and don't boil
  2. Add cream cheese and mix until warm and combined
  3. Season with salt and pepper
  4. Spread over pieces of toast
