Pulo Recipe Challenge – CAESAR SALAD

As a chef, Tim is not too keen on using pre packaged sauces and marinades but once in a while a product will come along that actually impresses him. Winners of the 2012 Retail Council of Canada’s annual Grand Prix New Product Awards, Pulo products are a great way for the home cook to prepare a delicious and nutritious meal for themselves and their family in no time at all. The meaning of the word Pulo in Tagalog, the language of the Philippines is “island” and with over 7000 islands (not all of them inhabited) with their own way of cooking, mealtime can be very toothsome.

Kare Kare Toasted Peanut simmer sauce

We tried the Kare Kare Toasted Peanut simmer sauce first. The directions are clearly written on the inside of the packaging and are easy to follow even for a beginner cook. Cooking with Pulo is a three step process, cook the meat, add the sauce, simmer. We simmered the chicken and served it on steamed rice with vegetables. It was peanuty but lacked complexity, with the addition of salt it wasn’t bad at all. Next time we might prepare it with a more flavourful meat like oxtail or stewing beef served with wild rice

Lemongrass Atsuete Marinade 

We were in the mood for a salad and the Pulo Lemongrass Atsuete Marinade sounded like a great way to transform a chicken breast for a dinner caesar salad. Instead of marinating for the recommended 20 minutes we left it all day and then grilled it on the barbecue. Sliced, the pieces of chicken were tender and had taken on the tangy taste of the Lemongrass Atsuete marinade. It was a new and fresh flavour to brighten up our weekly menu and put a new spin on a sometimes boring caesar salad.

Ingredients
  1. 1 garlic clove, minced
  2. 1/2 teaspoon anchovy paste
  3. 1 tablespoon fresh lemon juice
  4. 1 teaspoon Dijon mustard
  5. 1 or 2 squirts Worcestershire sauce
  6. 1/2 cup mayonnaise
  7. salt & pepper
  8. Romaine lettuce
  9. Goat cheese
  10. Parmigiano Reggiano
  11. 1 jar Pulo's Lemongrass Atsuete Marinade
  12. Croutons
  13. Tomatoes (optional)
For the salad dressing
  1. In a small bowl, whisk garlic, anchovy paste, lemon juice, Dijon mustard and Worcestershire sauce. Add mayo and salt & pepper
  2. Whisk until well combined.
  3. Taste and adjust seasoning
For the chicken
  1. Marinate according to package directions
  2. Cook on barbecue until done
  3. Slice against the grain
Assembling the dish
  1. Clean and dry lettuce leaves
  2. Shred leaves into bite size pieces
  3. Toss with salad dressing, enough to coat leaves
  4. Add croutons and goat cheese, toss to mix
  5. Place salad on plate
  6. Arrange chicken pieces and tomato slices on top
  7. Sprinkle with Parmigiano Reggiano

Pulo Lemongrass Atsuete Caesar Salad

Pineapple Tamarind marinade

National taco day arrived and we were well armed with Pulo’s Pineapple Tamarind marinade. We decided to marinate a pork loin and then slow cook it until it was shreddable. With the addition of lettuce, pickled onions and salsa we ended up with a Philippine islands taco. Again we agreed that the flavours were bold and refreshing among the general population of marinades and sauces like ranch or BBQ. After all when was the last time you cooked a Philippine inspired meal?

    Too frosty in the Arctic for outdoor grillin’ but do you think I could try to recreate your success in the oven? That just sounds soooo good I want to give it a try. Of course by the time I get the sauce shipped up here it might be summer. *laugh*

      Absolutely Maria, for two chicken breasts we used about half a bottle. If by chance you cook it too much (I’m sure you won’t) you could just add a bit of marinade at the end to moisten it up 🙂

    Okay, I cannot cook AT ALL, but it seems like even I could get the hang of this recipe! Do you know where these sauces are sold?

      Where are you located? I’ve seen their products in several grocery stores, Save On, Quality Foods and I think Safeway as well.
